I want to make a yummy broccoli and cheddar cheese recipe tonight. Any ideas?
I am making my family dinner tonight, and I have a 14 ounce bag of frozen broccoli in the freezer that I want to use. I was thinking of adding some butter and cheddar cheese to the recipe. I have about half of a large tube of butter, and 1/2 cup of cheddar cheese. Any ideas on how to make it tate delicious? I'm making the broccoli along with homemade fried chicken, and mash potatoes.
You're a little light on cheese,,so what I'd do is make a doctored-up white sauce and mix the cheese with breadcrumbs to sprinkle on top of a chopped broccoli/white sauce casserole. One thing that would be good is to add chopped-hard cooked eggs to a white sauce with a little bit of curry powder, and pour it over the (thawed, drained, in a casserole) broccoli, and top as suggested. Bake at 350 for half an hour. If that doesn't sound good, you can make a very light cheese sauce by melting:
1/4 c. butter over med. heat and stirring in:
3 T. flour, stirring until incorporated, constantly, for 2-3 minutes, then adding, 1/2 c. at a time:
2 c. milk, slowly continuing to stir while it thickens, and at the end adding your shredded cheese. If it's too thick you can add a bit of milk to thin it 'til it's the consistency you prefer. Again, pour this over your broccoli as indicated above, and bake as above. Dinner sounds good; what time shall I be there? : )
